Our Lunch menu draws inspiration from global cuisines and delivers a variety of delicious, and a bit healthier fare made with the freshest ingredients. Our Dinner and Fine Dining menus draw inspiration from French cuisine and experiences with ambiance and flare.
WHY FRENCH CUISINE?
First, the food is exquisite! French food is some of the most classic and beautiful food in the world. Second, French cooking techniques have influenced global cuisines for centuries. They’re fundamental. When you master the basics of French cooking, you’ll find yourself better prepared to make a variety of recipes, not just French. Plus, you can build off of those skills to tackle even more intricate dishes and techniques. Even if you haven’t consciously set out to make French food, chances are you’ve used a French cooking technique at some point or made a dish that evolved from a basic French recipe.
When you think French, think, onion soup, quiche, beef bourguignon, flamiche, coq au vin, duck confit, bouillabasse, escargot, terrines, salad nicoise, ratatouille, gratin dauphinois, souffle, crepes, gougere, chocolate mousse, palmiers, eclairs, creme brulees, madeleines, rich sauces, potent cheeses, and macarons.
The secret of the REAL French cuisine: uniqueness, talent, refinement, innovation, sense of proportion, style, and very good taste. The French invented much of the culinary techniques that other countries continue to use in their national foods.
The days of book-length menus and restaurants that offer something for everyone may be numbered. While there's a time and a place for some restaurants novel of options, restaurants that specialize in doing just a few things really well are having their moment in the sun.
According to CNN, smaller menus and more targeted offerings have helped the restaurant industry weather rising costs and pandemic-related labor struggles.
What's our view of culinary success? Everything is prepared in the Pepper kitchen and made to order. We want the best for you. Rather than taking shortcuts and using less than ideal ingredients to save money and time, we take extra care in using organics when possible, using fresh fruits and vegetables, and meats.
To say that Chef Diana is smitten with French culture isn't even the half of it. She continues to study and search out authentic and delicious dishes for Pepper. Her brief stay in Paris introduced her to the world of Parisian bistros, the excellence of French chefs, and joyous long lunches and late dinners.
BISTROS meet exacting standards because of the daily appreciation of good food and good value.
BISTROS have a history of a rustic, unpretentious atmosphere. A place where working people can relax and unwind. In France, bistro cuisine is often called cuisine de grand-mere. A menu consisting of simple salads and steaks, braised meats, and creamy desserts. And, of course, for the French, no meal is complete without bread, wine, and water.
BISTROS take waiting tables seriously as a vocation and waiters receive a salary rather than relying on tips to augment their wages. Usually, as with Pepper, any service charge and tax are included in your bill. If you want to tip anyway, please feel free to do so.
BISTROS usually serve lunch between noon - 2 pm, and dinner from 8 pm to 10 pm. At Pepper, lunch is served from noon to 3 pm, and dinner is served beginning at 6 pm. Almost all bistros are closed on Sundays and many on Saturdays. So is Pepper. Most are also closed on all major holidays as well. So is Pepper.
A BISTRO's service should be excellent but do not expect a quick meal. If you are in a hurry, go to McDonald's and save your bistro experience for when you have 1 -2 hours.
A BISTRO typically serves courses, even for the most casual meals - aperitif, hors d'oeuvres, entree, dessert, cheese, and coffee for example.
A BISTRO's table setting is usually simple with a plain white tablecloth, linen napkins, simple silverware and china, candle lighting, and bread somewhere nearby. Candles provide major lighting and the music plays in the background.
